Spicy Heirloom Tomato Soup

SERVES 4

This soup makes a beautiful and zesty first course for a summer lunch or dinner. Heirloom tomatoes are fun to grow in your garden and are much less expensive than those purchased at the store.

1 pound ripe heirloom tomatoes or other organic tomatoes

2 tablespoons cold-pressed sesame oil

1 medium sweet onion, chopped

3 to 4 yellow or orange bell peppers, seeded and chopped, white pith removed

1 bay leaf

1 tablespoon fresh thyme leaves

1 teaspoon Chimayo chili powder or smoky Spanish paprika

2 cloves garlic, chopped

1 tablespoon organic tomato paste

1 teaspoon sea salt

1 teaspoon freshly ground pepper

ΒΌ cup water

4 cups chicken or vegetable stock

Garnish: slice of avocado, drizzle of extra-virgin olive oil, chopped basil leaves, chopped Italian parsley leaves
